Line a 12 hole bun tin with paper cases...I used the normal size ones rather than muffin cases.
Preheat oven to 180, gas 4
175g softened butter
100g caster sugar (they said 175 but it doesnt need it)
a few drops vanilla extract
3 beaten eggs
100g brown rice flour (I had it so used it but white might work?)
2 tsp baking powder
50g desiccated coconut soaked in 100ml boiling water
Place all ingredients in mixer or food processor and whiz till smooth.
spoon into cases, mine were filled to the top. Bake in preheated oven ....they said 15 but it took 25 in mine. Remove buns from oven and transfer to wire rack to cool.
toast a few tablespoons of coconut in a dry pan...watch it carefully and keep shoogling it about so it doesnt burn. Mix 50g of softened butter and 100g icing sugar till pale and creamy, stir in toasted coconut and put on buns when cool. Enjoy Ev xx prom party garments for a baby toddler
